The best way I've found to cut my cats' claws is to wrap them up in blanket so that only the front paw I'm working on is sticking out, and keep them pinned to a bed by laying on top of them. That should frees both of my hands to work on their claws. It's incredible easier with two people, and doesn't usually require wrestling the cats into submission.
