I had a friend go to NZ a couple years ago. The couple of things I remember her saying were some of her favorites:

-high speed jet boat ride through a canyon in the Queenstown area. don't remember the name of the canyon or company though, unfortunately.

-ice climbing on the Franz Josef glacier
